Ingredients:
· 2- 3 lb. chickens (quartered)
· 4 oz. Gamla Pinot Noir
· 2 oz. Bartenura balsamic vinegar
· 1 cup flour or matzo meal
· 4 oz. oil
· 1 large onion (sliced)
· 6 oz. mushrooms (sliced)
· 2 medium sized red peppers (sliced)
· 2 medium sized green peppers (sliced)
· 3 cloves garlic (crushed)
· 12 oz. Gefen tomato sauce
· 6 oz. chicken stock
· 1 tsp. lemon juice
· Salt & pepper to taste
Method:
Season flour or matzo meal with salt and pepper and toss in chicken.
Sauté chicken until brown and reserve it on side.
Sauté onion until brown in the
same oil.
Add peppers and garlic.
Add wine and balsamic vinegar and reduce by half. Add stock and let reduce again.
Add tomato sauce, mushrooms, and lemon juice. Season.
Place chicken in a covered casserole dish, cover with sauce and bake at 350°F for 45 min. – 1 hr.
